A casual dining innovator, Tim Curci has played a key role in helping the Bonefish Grill chain grow to more than 150 units since its January 2000 launch in St. Petersburg, FL. Bonefish features a “polished casual” atmosphere and, with fresh fish being flown in every day, the restaurant consistently offers at least eight varieties of fish on its menu. Thanks in large part to Tim’s vision and unwavering passion for seafood, the chain continues a remarkable expansion across the United States.
That vision started early on for him when, at the age of 15, he began working in the restaurant business, first as a dishwasher and eventually as a line cook in high-volume restaurants. Prior to conceiving Bonefish, Tim served as senior vice president of operations for Hops Restaurant Bar & Brewery, a proprietary concept of national restaurant group Avado Brands. While Tim was overseeing a decade of successful growth and development of Hops’ 60-plus properties in 10 states, the restaurant was recognized by Nation’s Restaurant News as one of its “Hot Concepts.
Tim was recently invited to become a Trustee on the CIA’s Board of Trustees. We are delighted that he has agreed to share his expertise with the college.
