Scott Fredel is the Executive Chef/Owner of Pilar, a Aventura, FL restaurant venture. Selected as one of the 10 Top Chefs in South Florida by Ocean Drive Magazine, Scott, like so many other successful foodservice professionals, got his start at The Culinary Institute of America.
After graduating from the CIA in 1993, Scott honed his skills with culinary masters and successful restaurateurs such as Norman Van Aken, Mark Militello, Kerry Simon, and Pascal Oudin. He also staged at Chanterelle and Le Cirque in New York City. A native of Miami Beach, FL, Scott was executive chef for two years at Rumi, one of the most recognized and popular restaurants on South Beach. During his tenure there, he received exceptional reviews from both The New York Times and The Miami Herald. He has also been a guest chef at the prestigious James Beard Foundation Dinner in New York City.
Inspired by Ernest Hemingway’s famous fishing boat, the 80-seat Pilar offers patrons a contemporary yet comfortable dining experience featuring an appealing menu of American fare. The menu includes the freshest Florida seafood. This is a must for Scott, who in addition to being a proud CIA graduate is a competitive fisherman and United States Coast Guard-licensed fishing captain.
“My desire is to combine my love for food and passion for fishing with exceptional value,” says Scott. “I also want to show that a restaurant can be friendly and affordable without sacrificing creativity, style, and quality.”
