Carol Gallant ’99, Freelance Food Stylist

Freelance food stylist Carol Gallant says she has the best job in the world—and she’s racking up the professional accolades to show she’s one of the best at doing it. Carol, who had done “a little catering but never had a ‘career’,” entered the CIA at age 45 after being urged by chefs at the restaurant where she worked to attend the CIA. “It was the best two years of my life and the best thing that ever happened to me,” she says of her CIA studies. Carol found her calling when she was hired after graduation as food stylist and assistant to the president for a New Hartford, NY ad agency. Today, she’s a successful freelancer based in Ilion, NY with clients such as Heluva Good Cheese, Utica Cutlery, Walco Stainless, Empire Kosher Chicken, Green’s Ice Cream, and Bush’s Beans. Her work recently won the Award of Excellence for Food Styling from the International Association of Culinary Professionals. Successful food stylists, says Carol, “have to have an artistic eye. Either you have the eye or your don’t.” She credits her CIA studies with giving her a competitive edge in the field. Carol says “The essence of food is what I learned at the CIA.”
